Meet the Head Pickler
PJ Hopkins is a Philadelphia area native who grew up working in the restaurant and bar industry. Food and family were always at the center of his Italian-American heritage. His passion for food and a trip to Jazz Fest in New Orleans with his wife Valentina led to the idea and original recipes for Brine Street, and our signature Zing Beans are an homage to the classic creole-style dilly beans.
The first batches of Brine Street were crafted in a shared commissary kitchen in Fishtown, where the founders worked late through the night to produce hundreds of jars by hand. We have since expanded production to a co-packer, and in 2019 opened Liberty Kitchen, a retail Market, Deli and Commissary in Fishtown which sells hoagies ("Winner- Best of Philly" 2020), tomato pie, and, of course, our pickles. Our shared commissary kitchen is home to several Philly start-up food businesses, serving as their central production kitchen and home base.
